Half Day Courses 

Thai Half Day Class - 10th October - 10am - 1pm

Discover the wonders of Thai cooking, balancing the four ‘S’ – Salty, Sweet, Spicy and Sour and experiencing the exotic smells and flavours of herbs and spices of the Orient at this fabulous morning course.

The class includes a recipe pack, your dishes to take away and enjoy at home and tea, coffee and refreshments.

Macarons - 11th September - 2pm - 5pm

Discover how to make these elegant sweet treats that come in a multitude of colours and flavours. On this half day course the chefs will reveal the secrets and steps that will ensure perfection time after time.

Dimsum Half Day - 23rd August, 15th November - 10am - 1pm

Learn how to make these delicate Chinese pastries in the ICE Cook School Kitchen and watch as the skilled chefs guide you through the art of Dim Sum, from the way of eating to the traditional serving.

Full Day Courses

BBQ - 11th August - 10am - 4pm

ICE's chefs will teach you everything you need to know to cook the perfect BBQ.  From making your own brioche burger buns, creating delicious sausages, exploring different flavours using marinades and rubs and using different cuts of meat and experimenting with fish; right through to cooking techniques like smoking and slow cooking and even the perfect way to light your BBQ, this very much hands on course is informative,  fun and so much more. This full day class culminates in BBQ, burgers and beer!

Afternoon Tea - 25th September - 10am - 4pm

Spend the day making your Afternoon Tea from scratch! Everything rom the jam and bread through to classic finger cakes and scones. And the best bit? You get to take everything home with you to enjoy!

Breads of the world - 13th September, 30th October - 10am - 4pm

If you fancy yourself as a bit of a Paul Hollywood when it comes to baking, then this breads workshop is for you!

The full days course will cover how to make and bake classic french breads like fougasse, sourdough, spelt and focaccia.

The class includes a recipe pack, all your breads to take home ad enjoy, and tea, coffee and refreshments through the day.

Butchery for Beginners - 29th August - 10am - 4pm

On this one-day course you will learn how to skilfully debone a chicken, the art of curing meat and how to make your own bacon. The chefs will also show you how to make your own sausage meat, scotch eggs, sausage rolls and sausages. This fun course will take you through step by step what you need to know to become confident with all things meat.

Here in Suffolk we are spoilt for choice when it comes to wonderful fish.  The ICE Cook School team will guide you through what you need to know to get the very best out of these delicate gifts of the sea.  You will learn everything from how to select the very freshest and best, to preparation, cooking and presentation.  Pickling, sous-vide, pan-frying and many more techniques that will open up endless possibilities of textures and flavours.

All of the ICE Cook School Chefs began their careers learning and loving the art of classic French cookery.  As time has passed they have developed modern techniques that have fused with these timeless masterpieces.  On this one day course they will share with you their own interpretations of these classics that they still love to cook and eat.

Modern Cooking - 5th September, 7th November - 10am - 4pm

For many years ICE Cook School has represented some of the most innovative Chefs from around the world. The techniques you learn on this one day course are both cutting edge, scientifically researched and great fun. Everything from making spaghetti with strawberries, jelly that will not melt, spheres from liquids or instant ice cream we do it all. Join us for fun with food that will leave you scratching your head and wanting more.

Patisserie - 12th September, 24th October - 10am - 4pm

Patisserie is an art and skill that has fascinated Chefs and food lovers since the first time Choux pastry was baked and filled with sweetened cream. Join ICE Cook School's Chefs and learn to make patisserie that will leave you the envy of anybody you choose to let sample your new skills.  Your dinner parties will never be the same – from sweet tartlets and delightfully naughty choux buns to pithivier and clafoutis, you will make them all and more.

Scientific Cooking for Kids - 9th August, 31st August - 10am - 2pm

Budding Heston Blumenthal's will enjoy this fun session learning cutting edge, scientifically researched cooking techniques. Due to insurance, all children must be accompanied by an adult during the class.

Kids Club Doughnuts - 8th August - 10am - 12pm

Young Bake Off stars will be inspired by Ice's chefs who will show you how to turn a few basic ingredients into a delicious dessert. Making doughnuts from start to finish and leave with your own ‘Classic Jam’ and ‘Custard Grenades’. Due to insurance conditions all children must be accompanied by an adult during this class.
